Sweet Sausage Chili

Ingredients

  • 1 lb. bacon, diced
  • 1 red onion, diced
  • 1 lb. ground beef
  • 1 lb. sweet italian sausage
  • 3 cloves garlic, minced
  • 30 oz. great northern beans
  • 28 oz. crushed tomatoes
  • 1 cup ketchup
  • ½ cup brown sugar
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. Dijon mustard
  • 1 cup water
  • 3 Tbsp. chili powder
  • 1 tsp. smoked paprika
  • 1 tsp. cumin
  • 2 tsp. salt
  • 1 tsp. pepper

Tools

  • large dutch oven
  • slotted spoon

Instructions

  1. Cook 1 lb. bacon in a large dutch oven until crispy
  2. Remove bacon with a slotted spoon and set aside
  3. Drain most of the bacon fat
  4. Add 1 red onion to the dutch oven and cook for 2 minutes
  5. Add 1 lb. ground beef and 1 lb. sweet italian sausage and sauté until fully cooked
  6. Stir in 3 cloves garlic and cook for 1 minute
  7. Add 30 oz. great northern beans, 28 oz. crushed tomatoes, 1 cup ketchup, ½ cup brown sugar, 1 Tbsp. Worcestershire sauce, and 1 Tbsp. Dijon mustard, mixing until well combined
  8. Stir in 1 cup water
  9. Stir in 3 Tbsp. chili powder, 1 tsp. smoked paprika, 1 tsp. cumin, 2 tsp. salt, and 1 tsp. pepper
  10. Add bacon bits
  11. Simmer chili for 30 minutes, stirring every ten minutes
  12. Add more water as-needed
  13. Serve with cheese and cornbread
