Pineapple Chicken

Ingredients

  • ¾ cup pineapple juice
  • 3 Tbsp. honey
  • 2 Tbsp. soy sauce
  • 1 tsp. rice vinegar
  • 1 tsp. ginger, fresh & grated
  • 2 cloves garlic, minced
  • 1 Tbsp. cornstarch
  • 1 lb. chicken, cubed
  • ½ tsp. garlic powder
  • black pepper
  • 3 Tbsp. cornstarch
  • 2 Tbsp. olive oil
  • 16 oz. pineapple tidbits or chunks, drained
  • ½ red bell pepper, chopped
  • ½ red onion, chopped

Instructions

  1. Stir ¾ cup pineapple juice, 3 Tbsp. honey, 2 Tbsp. soy sauce, 1 tsp. rice vinegar, 1 tsp. ginger, 2 cloves garlic, and 1 Tbsp. cornstarch in a small bowl, whisking until smooth
  2. Add 1 lb. chicken to a bowl
  3. Toss in ½ tsp. garlic powder, black pepper, and 3 Tbsp. cornstarch until coated
  4. Add 2 Tbsp. olive oil to a skillet over medium-high heat
  5. Cook the chicken for 4 minutes per side until browned
  6. Transfer the cooked chicken to a plate
  7. Add 16 oz. pineapple tidbits or chunks to the skillet and cook for 1 minute
  8. Stir in ½ red bell pepper and ½ red onion and cook for another 3 minutes, stirring occasionally
  9. Add the chicken to the skillet
  10. Stir in the sauce until thickened, about 2 minutes
  11. Remove the pan from heat
  12. Serve with rice or noodles
