Pineapple Chicken
Ingredients
- ¾ cup pineapple juice
- 3 Tbsp. honey
- 2 Tbsp. soy sauce
- 1 tsp. rice vinegar
- 1 tsp. ginger, fresh & grated
- 2 cloves garlic, minced
- 1 Tbsp. cornstarch
- 1 lb. chicken, cubed
- ½ tsp. garlic powder
- black pepper
- 3 Tbsp. cornstarch
- 2 Tbsp. olive oil
- 16 oz. pineapple tidbits or chunks, drained
- ½ red bell pepper, chopped
- ½ red onion, chopped
Instructions
- Stir ¾ cup pineapple juice, 3 Tbsp. honey, 2 Tbsp. soy sauce, 1 tsp. rice vinegar, 1 tsp. ginger, 2 cloves garlic, and 1 Tbsp. cornstarch in a small bowl, whisking until smooth
- Add 1 lb. chicken to a bowl
- Toss in ½ tsp. garlic powder, black pepper, and 3 Tbsp. cornstarch until coated
- Add 2 Tbsp. olive oil to a skillet over medium-high heat
- Cook the chicken for 4 minutes per side until browned
- Transfer the cooked chicken to a plate
- Add 16 oz. pineapple tidbits or chunks to the skillet and cook for 1 minute
- Stir in ½ red bell pepper and ½ red onion and cook for another 3 minutes, stirring occasionally
- Add the chicken to the skillet
- Stir in the sauce until thickened, about 2 minutes
- Remove the pan from heat
- Serve with rice or noodles
