German Potato Salad

Ingredients

  • 2 lbs. red potatoes, cubed
  • 1 tsp. salt
  • 1 lb. bacon
  • 1 Tbsp. garlic, minced
  • ⅓ cup apple cider vinegar
  • 3 Tbsp. sugar
  • 1 Tbsp. dijon mustard
  • ½ tsp. salt
  • black pepper
  • ½ cup fresh parsley, chopped

Tools

  • large pot
  • large metal bowl

Instructions

  1. Wash 2 lbs. red potatoes
  2. Cube potatoes into one-inch pieces
  3. Place potatoes in a large pot and cover with cold water and 1 tsp. salt
  4. Bring to a boil, and reduce heat.
  5. Simmer the potatoes for 15 minutes or until the potatoes are tender
  6. Drain the potatoes, leaving the potatoes in the pot
  7. Return the pot to the burner (turned off) and allow the potatoes to steam dry
  8. Cook 1 lb. bacon until crispy, reserving the bacon fat in a large metal bowl
  9. Add 1 Tbsp. garlic, ⅓ cup apple cider vinegar, 3 Tbsp. sugar, 1 Tbsp. dijon mustard, ½ tsp. salt, and black pepper to the bacon fat
  10. Stir the mixture for 30 seconds
  11. Add the potatoes to the mixture
  12. Chop the bacon into small pieces
  13. Fold in the bacon and ½ cup fresh parsley
  14. Serve hot, warm, or cold
  15. Refrigerate within 2 hours
