German Potato Salad
Ingredients
- 2 lbs. red potatoes, cubed
- 1 tsp. salt
- 1 lb. bacon
- 1 Tbsp. garlic, minced
- ⅓ cup apple cider vinegar
- 3 Tbsp. sugar
- 1 Tbsp. dijon mustard
- ½ tsp. salt
- black pepper
- ½ cup fresh parsley, chopped
Instructions
- Wash 2 lbs. red potatoes
- Cube potatoes into one-inch pieces
- Place potatoes in a large pot and cover with cold water and 1 tsp. salt
- Bring to a boil, and reduce heat.
- Simmer the potatoes for 15 minutes or until the potatoes are tender
- Drain the potatoes, leaving the potatoes in the pot
- Return the pot to the burner (turned off) and allow the potatoes to steam dry
- Cook 1 lb. bacon until crispy, reserving the bacon fat in a large metal bowl
- Add 1 Tbsp. garlic, ⅓ cup apple cider vinegar, 3 Tbsp. sugar, 1 Tbsp. dijon mustard, ½ tsp. salt, and black pepper to the bacon fat
- Stir the mixture for 30 seconds
- Add the potatoes to the mixture
- Chop the bacon into small pieces
- Fold in the bacon and ½ cup fresh parsley
- Serve hot, warm, or cold
- Refrigerate within 2 hours
